Happy 50th Birthday, Singapore!! Today marks Singapore's Golden Jubilee - 50 years of Independence and the country's National Day. Every year there is a huge parade, known as the National Day Parade (NDP), to celebrate the occasion. But, before I talk about NDP, let's talk about cake!
So, I had a leftover sheet pan of cake from the big Singapore flag cake I did the other day. I cut it up and managed to make 3 small flag cakes, just to eat at home with the family.
Each mini cake was 2 layers of Devil's food cake, filled with whipped dark chocolate ganache. I used vanilla Swiss meringue buttercream to decorate the cakes like the Singapore flag. The crescent moon and the stars are made out of fondant. This time, I used a mini star plunger cutter to cut the stars out. Didn't have to hand-cut them like with this other flag cake!
My kids were fighting over who gets the piece with the stars and moon on it! Luckily there were three cakes, so everyone got what they wanted! Mmm, rich chocolate cake.
Now, back to the National Day Parade! The parade showcases some of Singapore's impressive military capabilities, tells the the story of the nation through songs and dances by school children, performers and local artists and celebrates Singapore's advancement, ending with an impressive fireworks display.

The countries' VIPs, Members of Parliament and of course the Prime Minister and President get the best view of the parade, front and centre of the stage. Every one else has to be lucky enough to win a seat at the parade grounds, by a balloting process. This year, we were fortunate enough to be able to attend the parade!! We got a seat at the side and had a decent view of all the performances. The highlight of the show had to be the Black Knight's aerial manouevers with the F15s! Happy 50th Birthday, Singapore!
