Celestia Pony is a new theme for me. Apparently she is a princess pony with magic powers who raises the sun. She seems to be more grown up than the other My Little Pony characters. For my purposes, all I had to know was that her hair and tail are pastel colours, and that she has a sun as a cutie mark. I got to make macarons, cupcakes and cookies in the colours of Princess Celestia for a little lady celebrating her 6th birthday.
I love the pastel colours on these macarons! I spoiled the birthday girl with five different fillings for each of the five different colours: strawberry for pink, lemon meringue for yellow, green tea for green, smoked salted caramel for blue and dark chocolate ganache for purple!

For the cupcakes, there were lemon cupcakes and strawberry cupcakes, both frosted with vanilla Swiss meringue buttercream & red velvet cupcakes frosted with cream cheese Swiss meringue buttercream. The lemon cupcakes were decorated in fun confetti sprinkles.

The red velvet & strawberry cupcakes had fondant pastel rainbow toppers. I rolled each colour into little snakes and stuck them together with a little bit of water. For the clouds at the ends of the rainbows, flowers were cut out of white fondant using a daisy plunger cutter.

The cookies are vanilla sugar cookies with a hint of lemon. For the no. 6's, I used a cookie cutter to cut out the six, and an small oval cutter to make the hole in the middle. To decorate the six, I wanted to do more than just use Princess Celestia's colours. I added wings and a crown to make the cookies more whimsical. The wings are easy to make. Just use a daisy plunger cutter, cut each flower into quarters and then stick one piece on top of another! For the crown, I used a small crown cookie cutter and trimmed the ends, and then added a teeny purple star in the centre for the jewel.

The rest of the cookies were A's, for initial of the birthday girl's first name. I had fun making these cookies! To make the rainbow strips, I rolled out each colour and then cut a strip, using a ribbon cutter to make sure each strip is the same width. Then I brushed a teeny bit of water onto the strips to make them to stick together, and then I rolled the rolling pin over them one more time to get them to stick and even them out. Using the same cookie cutter that I cut the A's out with, I cut the rainbow strips down to the right size. Then, I used a small star cutter to cut a star-shaped hole in the centre of each rainbow strip.

I added some yellow fondant at the bottom of the A's for Celestia Pony's shoes. And her sun cutie mark is even on the cookies, drawn on with an edible marker. Such fun cookies.
