This sweet pink Hello Kitty cake was a for a little girl celebrating her 2nd birthday with her classmates at school.

The cake is 4 layers of vanilla butter cake, filled with a fragrant vanilla crรจme Mousseline and vanilla Swiss meringue buttercream. I tried my best to get a super smooth buttercream layer for crumb coat because all lumps and bumps are visible under the thin fondant coating, especially now that i'm using the high quality and delicious Swiss-made Massa Ticino Tropic fondant.
The Hello Kitty topper is completely made out of fondant so she is fully edible. Not many adults I know eat fondant, but kids (especially my son) absolutely love chomping on the cute figurines. I always put the head on after everything has fully dried because if the fondant isn't dry, the weight of the head will weigh down on the body and everything will start going out of shape.

I used a number 2 cookie cutter to cut out the large fondant number two, and added some tiny daisy flowers as accents. I cut daisies out using plunger cutters, keeping in the pink/white/accents of black colour scheme that the birthday girl's parents specified.

To finish the cake, I added the birthday girl's letters, "pop-out"-style with the help of wooden skewers, and also a standing "Happy Birthday" message on the fondant-covered cake board.
