Pink & White Cake Pops & Macarons

I got to make pink and white cake pops, and pink macarons for two different parties. It was great that I could kill two birds with one stone, since both parties had the same colour scheme!

The cake pops are strawberry cake, crumbled and swired with vanilla Swiss meringue buttercream. The fancy pink and grey paper straws were provided by One and Only Gallery, as they would be putting together the dessert tables for both parties. As with regular lollipop sticks, one needs to make sure to dip the end of the straw in melted chocolate before inserting it into the cake ball, and then let that harden fully before dipping the entire cake pop into melted chocolate. If you don’t do this step and just poke the straw/stick into the cake ball and dip it immediately into the melted chocolate, the cake ball will totally fall off the stick and you will have to go fishing for it in the chocolate. Anyway, half the cake pops were dipped in white chocolate, and the rest were dipped in pink strawberry- flavoured chocolate. I always use compound chocolate for dipping stuff in because one does not have to temper compound chocolate as one would have to with couverture. I’ve stopped using candy melts entirely because they are just way too thick and obscene amounts of yucky shortening have to be added to get it the right consistency.

Before the chocolate coating fully dried, I sprinkled each cake pop with generous spoonfuls of glittering sanding sugar until the surface was complete coated. I like the extra touch of glam that sanding sugar adds over just plain chocolate-covered cake pops.

For the macarons,  I made one big batch and split the batter into two bowls, dyeing each a different shade of pink. The light pink macarons are filled with dark chocolate ganache. The darker pink macarons are filled with lemon curd and vanilla Swiss meringue buttercream. They look shiny in this pic because I had just pulled them out of the fridge and condensation was forming badly. Half an hour in an airconditioned room did the trick to dry up the condensation, so no worries there!

Both the pink jungle-themed dessert table and the Hello Kitty dessert table were set-up by One and Only Gallery. The pink cake pops and macarons were a nice addition to all the other desserts and custom-labelled treats and snacks on the table. I like how the macarons were displayed, in a mini-macaron tower!

The colours on both these pink-themed dessert tables are so sweet! Perfect for a baby girl’s 1st month celebration, and for a little girl’s 1st birthday celelbration! Girls and pink go hand in hand!
