Pink & Green Princess Cupcakes

These 3 dozen cupcakes were for a pink & green-themed princess party. There were Devil's Food Cake cupcakes, frosted with vanilla Swiss meringue buttercream, strawberry cupcakes frosted with strawberry Swiss meringue buttercream and red velvet cupcakes, frosted with cream cheese flavoured Swiss meringue buttercream.

I always use Swiss meringue buttercream rather than icing sugar-based buttercreams because it is much less sweet, and the egg whites in the buttercream help the frosting to hold its shape. Swiss meringue buttercream does not crust over, unlike American buttercream, and has a nice fluffy, mouth-feel.

To decorate the cupcakes, I used pink sugar pearls, and pink and white non-pareils. Too bad they only came in pink and white. Would've been nice to have green sprinkles too so that each cupcake flavour would have green, pink and white on them.

The princess cupcake wrappers were provided by the birthday girl's mummy. They're actually stickers! So all I had to do was peel away the backing and wrap them around the cupcakes.
