Again, the Carousel Cake eludes me! While I did get to make the rest of the desserts for this blue and white carousel-themed table, I didn't get to make the cake! Someday soon, I hope. Haaaa. This will be a longer post since for this table, I got to make cookies, cake pops, cupcakes, marshmallow pops and jelly shooters. So sit back, relax, and thanks for reading ;)

The carousel sugar cookies are made in the same way as these cookies, except using different fondant and disco dust colours. I tried my hardest not to get the blue disco dust on the white part of the cookie, but it's hard to keep that stuff from getting everywhere!!

The cake pops are red velvet cake, swirled with vanilla Swiss meringue buttercream. Half of the cake pops were dipped in white chocolate dyed blue with candy oil, and then rolled in blue sanding sugar before the chocolate coating fully hardened.

The other cake pops were dipped in melted white chocolate. After the base chocolate layer had dried, I swirled some more white chocolate on the cake pop using a long BBQ skewer, and then sprinkled blue disco dust on while the chocolate is still wet. The idea is to keep the glitter only on the wet chocolate and then brush off the excess when it has dried. But for one reason or another, I couldn't stop the glitter from getting everywhere!! Must find out the secret to perfect glittery swirl cake pops like these by Cake Poppin.

To finish the cake pops, I added a cut-out fondant horse and white and gold sixlets at the top of the striped paper straws to really give them that carousel feel.

The cupcakes are red velvet cupcakes, frosted with a swirl of cream cheese-flavoured Swiss meringue buttercream and topped with a simple white fondant star. On hindsight, I probably should've made blue velvet cupcakes! Then even the colour of the cupcakes would match the theme.

The marshmallow pops are straight-forward to make. The trick to getting them on the stick without smooshing them, is to rub a teeny bit of shortening on the end of the stick. Then the marshmallow will easily slide on. Dunk the entire thing very very briefly in a mug of water, and then quickly roll them in sanding sugar while they are still wet.

The jelly shooters were actually my "first" attempt for a dessert table. I used blue agar-agar jelly mix, adding in some coconut milk to replace the water to get the lighter blue layer in the middle. When making jelly, of course, one has to wait until the first layer sets up before pouring on the next layer. I tried to add a white fondant star in the middle layer so that it would look interesting when viewed from the top, but I guess the final layer of blue jelly wasn't clear enough for the star to be visible. Maybe next time I'll put it closer to the top.

All these bakes were featured on a lovely blue and white Carousel-themed dessert table, styled by lovewithdetails. The printables were custom-made by Tweet Paperie. I made all the desserts, with the exception of the cake, made by Lollipop Project (which had the surprise addition of the colour pink?). The addition of all the helium balloons, the letter balloons and the big wooden heart and letters spelling "JYREN" by the birthday boy's mummy added even more drama and flare to this lovely table set-up.
