For my son's last day in school, I baked up some good ol' chocolate chip cookies for his friends. I prefer chewy chocolate chip cookies to crunchy ones, and these have just the right amount of chew, and are packed full of buttery chocolate chip flavour. (I chopped up a block of dark chocolate to make chocolate chunk cookies cuz I actually didn't have any chocolate chips on hand)

I made the dough the night before, and let it chill out in the fridge until the next night. It really helps to chill the dough properly, cuz if you bake the dough up right after mixing, the cookies spread out A LOT and tend to come out pretty flat.

I used a small 3cm cookie scooper to measure out the dough, and baked them in a sheet pan lined with a Silpat mat. You gotta leave room to grow in between the scooped cookie dough, or you may end up with one gigantic cookie after they're all baked up!

I love watching the cookies bake up in the oven (& the place smelled soooo buttery good). 10 minutes later and they're perfectly done, with the edges just starting to brown. Don't worry if the cookies still look like giant mounds by the time you hit 8 minutes, cuz they really only start flattening out after 8 minutes, especially if you've chilled your dough right.

After the cookies had cooled completely, I packed them up in pairs, in cellophane bags closed off with a twisty-tie. We also packaged up store-bought baked potato chips and jelly for those with a halal requirement. Hope the kids enjoyed the cookies! Singapore kitchen is officially closed until next Sept!
