The cake for the cakesicles were funfetti cake. I love how cakesicles are less work than traditional cake pops because, unlike cake pops, you don't have to bake the cake, crumble it, mix with buttercream, portion it out and then roll them into balls. For cakesicles, they're baked right in the Silikomart mini popsicle mould with the popsicle sticks already in them, and are ready to go from there!

After sticking the cakes in the freezer for about half an hour, they were double-dipped in melted white chocolate. I dip them twice so that theres a more opaque coating of white chocolate. A single dip means that you can still see the rainbow sprinkles in the batter, but if you don't mind this, a single dip is perfectly ok!

For both the cakesicles and cake pops, the horns were made front fondant, moulded using a silicone seashell mould. The little roses for the unicorn hair was moulded out of fondant as well. The fondant details were stuck onto the cakesicles and cake pops with a little melted chocolate.

To finish off the cakesicles and cake pops, I drew their eyes on using a black edible ink marker, and then I added blusher on their cheeks with some pink lustre dust.

The cookies were vanilla sugar cookies, with a hint of lemon. I flooded them with 15 second white royal icing. When that layer had dried, I piped on the hair using small star piping tips, using stiff consistency royal icing so that the star pattern is visible. I dried the cookies in an air-conditioned room over night, and then went back in to draw their eyes on with a black edible ink marker. Their horns were painted in Rolkem Supers gold, mixed with a little vodka.
