Mothers' Day Cake

9:04am: I was greeted with breakfast in bed this morning by my two girlies (minus the boy cuz he was at camp). A nice big bowl of Harvest Crunch cereal with milk. :) They showered me with hugs and kisses and handmade cards and flowers too! So sweet.

We had a quiet day at home with the inlaws, playing mahjong and watching Netflix. And after a heavy steamboat dinner (my stomach is burning from the mala as I type this), we celebrated mothers' day with this lychee cheesecake that I whipped up this morning!

I used Miki Mak's lovely, light and not-sweet no-bake lychee cheesecake recipe (perfect for Asian and old folks' palates!). My girl helped to crush the digestive biscuits for the crust, mix in the melted butter and press it into a springform pan, but she lost interest after that and went to go build a tent made out of blankets with her sister.

After three hours or so of mahjong with the inlaws (my father-in-law was taking no prisoners and bankrupting me in no time at all), the cheesecake had set (hooray for no-bake!) I decorated it with some fresh blooms, blackberry curd-filled macarons, meringue kisses and fresh strawberries, blueberries and lychees. It was super quick to whip up and decorate cuz I had already made the macarons and meringues in advance and had leftover toppings from this number cake from yesterday!

Happy Mothers' Day!

I arranged the toppings in crescent moon-style and made sure to glaze the fresh fruit to protect them from drying out, and to give them a nice sheen. To add a little glam, I sprinkled on some gold dragees, and lightly dry-brushed the macarons with some Rolkem Supers gold dust.

It's times like these that I wish I was back in Vancouver with my family to celebrate Mothers' Day with my mom! But I know she's in good hands and that my sisters will be spoiling her with a fancy Sunday brunch! I'll definitely be in town to make her a cake next year though! ;)

My FIL's turning 64 next week and we had an advance birthday celebration for him after dinner too. His cake was a yummy Pine Garden black forest cake. Nothing makes this guy smile more than his monkey grandkids!

And then it was the ladies' turn! Look how many mothers were at our family dinner! It's always a gong-show to try and get a pic with everyone looking at the camera. Haha. Happy Mothers' Day to all you fantabulous super mommies out there!
