Whenever I used to make Mickey Macarons, I used to just pipe out a round black macaron, with two smaller round ears, and then decorate them with red and white fondant after baking. I've never made Mickey Macarons using only macaron batter! I figured this would be a good time to try, since these were for one of my good customers and she was a willing guinea pig!

So, instead of just piping a round circle for the main face, I piped half circles with black macaron batter, and then piped the other half with red macaron batter, much like how one decorates a sugar cookie with royal icing, by first "outlining" the shape and then filling in with more batter! I piped the ears on afterwards and then the yellow buttons, also using macaron batter. After letting them rest for about 30 mins in an air-conditioned room, I popped them in the oven and crossed my fingers.
I've had issues with previous attempts at character shaped macarons, things like feet developing in weird areas like the ears or nose. I was prepared to see the same thing with these Mickey Macarons, but my fears were unfounded! These came out of the oven with beautiful, even feet! Even the under-sides looked pretty, with the contrasting red and black colours!
Since this was a guinea pig batch, I decided to do a few new fillings as well, aside from my stable dark chocolate ganache, lemon meringue and smoked salted caramel macarons, I also made Oreo, strawberry and pistachio cream macarons! Spoiled for choice!

lots of macaron fillings today! |
My guinea pig fed back that these Mickey Macarons were excellent! She and her family loved all the flavours. Hooray! As Mickey likes to say, "when you've got ears [and macaron feet!], say cheers!"
