I got to make cookies, pudding cups, fruit sticks and cupcakes for a Jungle-themed dessert table set up. The party was held outdoors, and it's always a challenge to make desserts for events in a non-airconditioned environment, especially here in the hot and humid tropics!! I always get asked, will the cake melt? How long can it last unrefrigerated? People, people, please remember that butter melts at 32-35C, so, of course here in the tropics, when that is how hot the ambient temperature is, of course buttercream may also start to melt when left out of refrigeration for too long! And don't get me started on how heat and humidity (especially humidity!) are not a friend of fondant decorated cakes.

Anyway, I'm ranting unnecessarily, because these desserts luckily did not experience any issues for this particular table. Phew! The sugar cookies were decorated in fondant, with all the jungle animals that appear on the party banner. The monkey and the kangaroo have such funny expressions! And that sheep is actually the birthday boy's favourite stuffed animal. Some of the cookies were decorated with leaves and bugs and birds as well, to give more colour to the table.

I layered the mango pudding cups, adding a bit of orange colouring as a contrast to the yellow layers. Surprisingly, unlike jelly, mango pudding remains solid at ambient temperature, so this is a good choice for outdoor events. Jelly (Jell-O or shaky jelly) liquifies, as does coconut pudding.

The cupcakes were carrot cake cupcakes with walnuts, frosted with grass tip no. 133 to make the buttercream resemble a grass patch! They look really cute with the customized animal print wrappers printed by All Mommy Wants.

The cupcakes look even cooler, arranged in this neat compartmentalized shelf, with super cute animal toppers. The cupcakes, cookies and pudding cups joined other snacks and desserts on a jungle-themed dessert table, styled by the talented All Mommy Wants team.

Oh yes, I forgot that I also did fruit sticks! This is a first, doing a "healthy" dessert for a change!! Green grapes and strawberries threaded onto a BBQ skewer fit right in with the other desserts on this jungle table.

I love these big banana leaves that the cookies were displayed on! The leaves, together with the wooden board , probably make the the animal cookies feel like they are in a jungle! Haaaa.
