Mickey Cupcakes

My usual Mickey cupcakes involve mini Oreo ears on top of red buttercream. I wanted to try something different this time, using red sanding sugar instead, like with these cupcakes. 


There were 50 cupcakes altogether, in chocolate, vanilla & red velvet, all frosted with (uncoloured) vanilla Swiss meringue buttercream. The frosted cupcakes were literally rolled in red sanding sugar until the surface was completely covered. The yellow buttons are Reese's Pieces. I always use Reese's Pieces for this purpose instead of m&m's cuz since there are only 3 colours in Reese's Pieces, one party-sized pack had more than enough yellow ones for these cupcakes! Can you imagine how many m&m's packages you'd have to buy in order to get 100 yellow m&m's??

To make a Mickey Mouse head out of Oreos, separate regular oreos into two cookies, and separate mini Oreos as well, for the ears. I chose to scrape off all the cream from the middle of the cookies for aesthetic purposes. You could totally leave the cream on. Check out the baseball-sized ball of Oreo cream there in the corner of the tray in the pic above, scraped out of 25 regular Oreos and 50 mini Oreos! Yipes, "trans-fat" bomb right there!

Anyway, to assemble the Mickeys, just dab a little bit of thicker-consistency royal icing on the tips of the mini Oreos and attach them to the tops of the regular Oreos. Let them dry for at least 30 mins (in an air-conditioned room if you're in a hot and humid climate like me!) before picking them up and positioning them into the centre of your red-sugar covered frosted cupcake. 


Love how these Mickey cupcakes turned out, especially with the polka-dotted red cupcake cases!
