The "Tiffany blue" colour is a challenge to get right. I've tried mixing Americolor sky blue with lemon yellow in different proportions to get the shade, but the easiest way, by far, is to use Wilton's teal gel colouring. Of course, this only works when dyeing white fondant. Getting Swiss meringue buttercream, which already has a slightly yellowish tinge, the right shade of Tiffany blue is another challenge, and so is colouring white chocolate...

So when someone asks for desserts in Tiffany blue, I always get concerned that the colour will be off! For a baby girl's first month celebration, I got to make cookies, macarons, cake pops and cupcakes.

The cookies were vanilla-lemon sugar cookies, decorated with a fondant scalloped-circle, embossed with a quilted pattern and topped with a white bow, just like a box from Tiffany's. Too bad I don't have that little key mould. A tiny silver key hanging from the ribbon would've been the perfect addition to these cookies.

Since the colour scheme was grey, Tiffany blue and white, I made the macarons grey and Tiffany blue. The grey ones were filled with smoked salted caramel, and the Tiffany blue ones were filled with lemon curd, in a cloud of Swiss meringue buttercream (I like to call this flavour "lemon meringue" ;)

The red velvet and lemon cupcakes were decorated with a swirl of buttercream, sprinkled with white nonpareils, silver pearls and silver dragées. Since the buttercream has a yellowish tinge to it, to get the right shade of Tiffany blue, one has to add some sky blue together with the teal colouring.

The cake pops were chocolate and strawberry cake pops, dipped in white chocolate and rolled in glittering white sanding sugar. I've learned not to use the strawberry cake for the white cake pops, because the pink of the cake shows through! To get this nice shade of Tiffany blue for the cake pops, I had to mix yellow and blue candy oil, a toothpick smidge at a time, into the melted white chocolate, being careful to add a little at a time until I got the right colour. This Tiffany blue is so stressful!
