Here's a different style of Frozen cake, decorated with fresh whipped cream and royal icing icicles. I like the light blue-white-purple colour scheme, and the carved stairs on the top tier. It is decorated with a few fondant accents and topped with toy figurines.

The 5" & 7" tiers are made of the ever-popular Devil's food cake, filled with whipped dark chocolate ganache. To get the "water colour" effect on the outside of the cake, I dyed the whipped cream and piped each colour a few times around the cake. It really helps to have a turntable for this!

After you've piped your rings of whipped cream (or buttercream) all around the cake, use a bench scraper to remove the excess cream and smoothen out the surface. Use an off-set spatula to pull the excess cream hanging from the top edge of the cake, towards the centre, to get the top smooth. Try not to over-whip the cream or you will have a hard time smoothening it out!

For the top tier, I carved stairs on the cake just using a steak knife. Ha. Two guesses where the scraps went. Then I covered the whole thing with more whipped cream (it's pretty tricky to get the cream smooth around the stairs, especially since I over-whipped the cream a little!) I smeared on some blue cream on each of the steps for that extra icy feel.

To give the cake some "melty" icicles, I piped on some 15-second consistency royal icing, leaving a gap between each icicle and piping one complete round, before going back and piping more icicles to fill the gaps. This way, the royal icing doesn't just meld together and make one giant melty icicle.

To decorate the cake, I made some fondant snowflakes and cut out some letters, generously sprinkling them with baby blue disco dust to give them that magical glittery Frozen feel.
Now, usually we have to be concerned when putting fondant decorations on whipped cream, because the high water content in the cream causes the fondant to bleed and droop. But since our snowflakes are white, and they were put flat against the cake, there wasn't any bleeding or drooping issue.

The birthday girl's mummy arranged the toy figurines all around the cake at the party venue. It's safer to do it this way instead of having to worry about the figurines toppling over during transport. Here's the birthday girl, with her special Frozen birthday cake. Wishing sweet Reanne a very happy 7th birthday!
