"Do, do, do, do, do, do, it's the Mickey Mouse Clubhouse. Come inside, just come inside! M-I-C-K-E-Y M-O-U-S-E!" Yup, I had the theme song from the TV show in my head the entire time I was making this cake! I had made a Mickey Mouse Clubhouse cake a couple weeks ago, and this cake would be sort of a similar design, except that there's 3 tiers instead of 2!

The top and bottom tiers are Devil's food cake, filled with whipped dark chocolate ganachelemon cake. The middle tier is filled with tangy lemon curd and Swiss meringue buttercream. Initially it was just going to be a 2-tier cake, but the number of guests attending the party went up so I baked up a third tier!

To make this tall 3-tier cake even taller, I topped it with a big fondant rainbow! And, instead of the sun that I usually put behind my rainbows, I decided to surprise the birthday boy by making Tootles! Tootles looks deceivingly simple, but he actually has so many details and it was challenging to cut them all out of fondant!

The bottom tier of the cake was decorated with a Mickey Mouse Clubhouse, complete with the hand and foot and blue slide at the side.

I'm glad the small Mickey head cookie cutter that I ordered off of eBay arrived in time for this cake, so I got to decorate the middle tier with some blue Mickey head cut outs, together with some yellow circles and white stars.
I really like the "Happy 1st Birthday" banner on the cake board. My new teeny Mickey head cutter is too cute, and I liked the little detail that the tiny Mickey head added to the banner.
I transported the cake to the venue with only the bottom two tiers stacked. I haven't attempted to transport a fully assembled 3-tier cake before and I didn't want this to be the first time! The drawback with stacking the top tier at the venue is that there is no opportunity to make a fondant ribbon to border the bottom edge of the tier. It bugs me that there's an imperfect join between the top and middle tier.

Anyway I stuck in the pop-out stars and topped the cake with the rainbow and Tootles. The birthday boy's mummy provided the Mickey and friends toy figurines, which I arranged onto the cake. These particular figurines are pretty awesome because each one has a little hole underneath it. I stuck a toothpick in the hole and stuck the figurines in the cake! No need for royal icing here.
boo to the gap |
Along with the cake, I got to make mini Mickey-style cupcakes and Mickey cookies. The cupcakes are red velvet and vanilla cupcakes, frosted with vanilla Swiss meringue buttercream dyed red. This time, I used sugar-free dark chocolate buttons for the ears, and yellow m&m's minis for the buttons. I think the dark chocolate buttons are a better size for the ears than the regular brown m&m's that I used last time.

The birthday boy's mummy put together a nice and simple baby Mickey dessert table, with sweet baby blue, pink and yellow colours. She even made all the paper cut-outs herself, and did up a cute chalkboard-style poster of baby's milestones at one year old! Happy 1st Birthday, baby Favian!
