Thai Milk Tea cake

We had birthday brunch with the fam bam after church on Sunday at Coast on Alberni. They have a really awesome brunch menu, with $10 bargain benedicts! And of course, I made my own birthday cake. When you haven't been home for your birthday in ages and you make cakes for a living, it's only natural that your family expects you to make yourself a birthday cake so that they can finally try some! 

Thai Milk Tea Chiffon Cake

I decided on a Thai Milk Tea chiffon cake. I hardly ever make light and fluffy chiffon cakes. Most of my cakes are butter-based, and are decorated with buttercream or fondant! But since I don't have much of my baking supplies here, nor do I have the ingredients to make a fancy cake, I went with a classic and simple design.

It's the Thai Milk tea that really makes this cake. My fave brand to use is ChaTraMue, authentic from Thailand! It's very fragrant and adds that unmistakable Thai Milk tea sweet aroma to the cake.

The cake is triple Thai Milk tea: Thai Milk tea chiffon cake, Thai milk tea fresh whipped cream filling, and Thai Milk tea sauce//drip. And it's an unusual flavour that has not yet become popular here in Vancouver, but it may very well soon will be! (like salted egg yolk!)

The cake is decorated in a very rustic style, with a semi-naked Thai milk tea fresh whipped cream frosting, and a Thai milk tea drip on top. I actually didn't have enough of the drip to cover the surface of the top of the cake, so the drip really is only around the edges.

The centre of the cake was piled high with fresh Chilliwack blueberries and strawberries, glazed with apricot jam from my cousin's wedding back in March! She had actually moved to Victoria and was missing yet another family gathering, so she was glad to know that she was still somehow a "part of the celebration" :P

Along with the cake, i also made some Tsum Tsum nutella steamed blossoms for the kiddos. Kids love anything cute and colourful, and this Thai Milk tea cake was pretty brown and "unattractive" to kids eyes! (plus, I wasn't sure if the kids would eat a tea-flavoured cake!) make a wish!

It was so fun to light up lots of candles, one for each kid to blow out! (not because i'm that old!!) And I'm so glad that everyone enjoyed the "new" Thai Milk tea chiffon cake: soft, fluffy and fragrant!
