Blue Ombré Frozen Cake |
That's precisely what the birthday girl's mummy wanted with this cake, straight-up buttercream rosettes, with a touch of Frozen. The cake itself is 3 layers of the ever-popular Devil's food cake, filled with whipped dark chocolate ganache, and frosted with vanilla Swiss meringue buttercream. Most of my cakes are at least 4" tall, so I always advise that the cake be cut like a grid, instead of large wedges. Otherwise it would be impossible to slice the cake into 35 wedges!
The cake is frosted in blue and white SMBC. We had decided on one shade of blue and white, and the birthday message written in buttercream on the cake board, but I was in a good mood and decided to add another shade of blue and a fondant message plaque just for fun.
I have to point again just how yellow our butter is here in Asia. I just can't get the buttercream to be a nice bright white without adding heaps of white food colouring to it. I seriously added an entire 0.75 oz bottle of Americolour bright white and a couple of teaspoons of SugarFlair Superwhite powdered food colouring into the buttercream and it still had a yellowish tinge to it.

Anyway, the buttercream rosettes were piped on using a 1M piping nozzle. I sprinkled the cake with silver dragees in two sizes, and added fondant snowflakes to give it that Frozen touch. This is the 3rd set of snowflake plunger cutters that I've gone through cuz the spring mechanism just keeps falling out! The thing about made in China products...cheap but they don't last.
