Batman Drip Cake |
The birthday cake is 2 tiers of the ever-popular devil's food cake, filled with whipped dark chocolate ganache and iced with vanilla Swiss meringue buttercream. The chocolate ganache drip on top is a 2:1 ratio, by weight, of dark chocolate and milk, dyed black using powdered food colouring.

When adding chocolate drips on a buttercream cake, it is very important that the cake is cold and that the buttercream has set. It is also very important that you cool the chocolate ganache drip down to the right temperature cuz if it's too hot, it'll melt the buttercream and drip all the way down to the cake board and make quite a mess. If it's too cold, it'll be too thick to drip down the cake properly and you'll have a challenging time covering the cake's surface.

The candylicious toppings were added on the cake before the chocolate ganache drip had set. I got a hold of a variety of "batman-coloured" candies and chocolates like yellow gummy bears, jelly beans, Ferrero Rocher, Toblerone and banana Pocky sticks! I also moulded some Lego bricks, Lego men and Batman logos out of chocolate, and used some of the melted yellow and black chocolate to drizzle onto the chocolate wafers and Oreos and for the chocolate sail on top of the cake.
prep the chocolate toppings in advance |
I added in a few black and yellow macarons for good measure too! It is a good idea to prepare all of the candy toppings ahead of time, so you're not scrambling when it comes tip to assemble them onto the cake before the chocolate ganache drip sets!!

I got a fancy paper topper of the birthday boy's name from Circus SG to top the cake, and his mummy got the perfect Batman and friends figurines from Amazon to finish off the cake! I placed the figurines on at the venue cuz there is no way to secure them onto the cake for transport.

In addition to the cake, I also made Batman-themed marshmallow pops, featuring (the Lego Batman version of) Robin, the Joker, the bat symbol and of course, Batman! For Batman's ears, I cut miniature marshmallows in half diagonally, and attached them onto large marshmallows using some melted chocolate.

For the Joker and Robin's hair, I waited until the chocolate had cooled down before piping it onto their heads, so that the hair "strands" would be distinct and the hair could be "shaped". If I had piped the chocolate one while it was still warm and flowy, the hair would just be a smooth coating, like the chocolate coating on their faces.

The vintage Batman figurines were just the perfect thing to finish off the cake. I used a couple of skewers to help Batman and Robin stand up on the cake, tucking the ends of the skewers under their capes to minimize visibility.

The birthday boy's grandma had the great idea to use glass marbles (the kind usually for aquariums or plants) placed in glasses to stand the marshmallow pops in. Love how they look on the table.
