I've been getting quite a few requests to make letter cakes, thanks to the Instagram trend started by Adi Klinghofer. This particular Letter Cake was to made to have a Frozen theme, in line with the birthday girl's fave cartoon.

The cake is two layers of moist vanilla sheet cake, carved into the letter A, filled with vanilla custard. I had to brainstorm on the fruit that were in Frozen colours and decided on blueberries, blackberries and grapes.

Other toppings included blackberry curd macarons, cotton candy meringue kisses, chocolate-coated wafer cones, Loacker vanilla wafers, Peppero white cookie sticks, fresh blue blooms, silver dragées and a sprinkling of fondant snowflakes!

I also made a fondant name plaque with a happy birthday message, coating the back with white chocolate so that the moisture from the fresh whipped cream didn't make the fondant all soft and soggy. I added a small glittery fondant number 5 as well. Loved how this "Frozen" letter cake turned out!
