Unicorn Cupcakes & Madelaines

Along with the assorted cake popsicles for the party, I also got to make unicorn cupcakes and madeleines. I love "unicornizing" anything cuz all those happy rainbow colours and the gold horn just adds instant glam! 


Unicorn Cupcakes

The cupcakes are funfetti vanilla cupcakes baked from scratch and frosted in vanilla Swiss meringue buttercream.

The fun rainbow swirl is made by piping the pastel shades of buttercream in lines on a piece of cling wrap, rolling it up (like sushi), cutting off one end and placing it in a piping bag fitted with a 1M tip, like this

For the ears, I used mini marshmallows cut diagonally in half and dipped in pastel pink sanding sugar, though you can't really see the pink in the photos. The horns were made out of fondant and painted gold with Rolkem Supers gold dust mixed with a little vodka. 


Unicorn Madeleines

The madeleines were dipped in white chocolate, and decorated in the same style as the cake popsiclesusing an assortment of sprinkles, edible flowers and edible silver leaf
