Unicorn Dessert Table

September was a serrrriously craaaazy month. All those made-over-the-holidays babies celebrating their birthdays. I read somewhere that delivery room nurses and doulas are so overworked in September cuz there are just so many holiday babies popping out! 


Unicorn Rainbow cookies

I'm so glad that we made it to the end of September, with one of my fave party themes: Unicorn rainbow! I got to make unicorn cupcakes, cake pops and cookies for a young lady's 4th birthday celebration.

The cupcakes were red velvet and chocolate cupcakes, frosted with a rainbow swirl of vanilla Swiss meringue buttercream. To get the rainbow frosting, I used what I like to call the "cling wrap" method, where you pipe strips of coloured buttercream on a piece of cling wrap, roll it up like sushi, cut off one end and then slip the cut side into a piping bag fitted with a 1M piping nozzle. The colours come out nice and swirly using this method.

For the ears, I used my shortcut method of mini marshmallows cut diagonally in half, brushing the cut surface with gold dust mixed vodka. You could mould the ears out of fondant, but I like to do the marshmallow thing.

The horns were made by small rolling balls of fondant out into snakes, thinning out the ends of the snakes but leaving the middle part fat. The two thin ends were then brought together by folding the snake in half, and then twisting the fondant into a horn. The horns were painted with gold dust mixed with vodka once they were dry, and a toothpick was used to prop them up in centre of each cupcake.

The cake pops were devil's food cake, swirled with vanilla Swiss meringue buttercream and dipped in melted white chocolate. I again used mini marshmallows cut diagonally in half for the ears, and for consistency, I moulded the horn out of fondant using the horn snail cavity from a seashell-themed silicone mould! Love it when stuff serves multiple purposes :D

I used stiff consistency royal icing for the mane, getting the rainbow colours in the same "cling wrap" technique as the cupcake frosting. I actually like the "back" of the unicorn cake pops more that the front cuz of the rainbow swirls! The sultry eyes were drawn on with a black edible ink marker.

My fave part of this unicorn dessert set were the cookies! I got to make unicorn head cookies for the dessert table, and also unicorn horns, full body unicorns and rainbow cookies for the goodie bags!

I made these late into the night and actually ran out of icing twice and had to make new batches. In fact, I even ran out of icing sugar and had to make a quick run to the supermarket across the street to get more! (Thank goodness for 24-hour Fairprice Finest) The white part of the cookies were flooded with 15-second consistency royal icing, while the rainbow manes were piped on with stiff consistency royal icing. It took a while to tint the icing 6 colours of the rainbow, but I love how the cheerful colours turned out.

For the large unicorn horn, I filled in alternate sections of the horn first, letting those dry before piping in the other sections, so that there would be definition between the  "swirls" of the horn. The roses were piped on with small open star piping nozzles and then a leaf tip was used to fill in the gaps with light green royal icing. When the icing had dried completely (about 6 hours in an air-conditioned room), I painted the horn gold with some gold dust mixed with vodka.

I had to extend the arch of the rainbow cookies by combining cookie cutters so that there would be more cookie surface to have 6 colours. To get the interesting ruffled look, I cut the tip of each piping bag at an angle (like a petal piping tip), and piped out the ruffles in an upside down "U" motion using stiff consistency icing.

My fave has to be the full-body unicorn cookies though, which were hand-cut with a sharp paring knife cuz I don't have a cookie cutter in this shape. After the icing on the body was dry, I piped the mane on using a small star tip, making rainbow royal icing using the same "cling wrap" method as the rainbow frosting for the cupcakes. I painted on their golden hooves and muzzles after the icing was fully dried. I love how these little cuties turned out!!

The cookies which were meant for the goodie bags were wrapped up individually in cellophane bags and tied off with colourful ribbon. I think I set a ribbon-tying personal record with these guys cuz it usually takes me forever to make a decent bow.

These colourful unicorn cupcakes, cake pops and cookies went on this lovely rainbow-unicorn themed dessert table, styled by My Sweet Secrets. The twinkling lights on the pink tutu table skirting was the perfect touch of magic. The too-cute baby unicorn cake was done by Sweets and Spatula.  I love how everything came together, with lots of cheerful pastels and a touch of gold to glam things up. Happy 4th Birthday, dear Chanel!
