Anyway, she so happens to be neighbours with the mummy blogger behind Hello Mrs Tan and she mentioned to her that I make cakes and things. Seriously, the best form of advertising is word of mouth, and best of all, it's free! So, I was blessed with the opportunity to make hellomrstan's daughter's first birthday cake! (PS, her daughter has the same name as mine, only spelled differently!)

One of the hot trends on social media right now is the unicorn cake, originally whipped up by the twin sisters behind Canada's Jenna Rae Cakes (whoo! Canada!) and made famous on Instagram by the two lovely ladies behind KEK & Co. from Malaysia!

So far, I've gotten to make a couple of unicorn cakes & cupcakes, but never pink ones! So I was excited to bake up a "pinky" unicorn cake for little K's first birthday, with matching pink-frosted unicorn cupcakes!

The cake was a yummy strawberry cake, filled with fancy boiled vanilla bean frosting (aka ermine frosting). I haven't made ermine frosting in ages, and my memory was happily refreshed with just how light, mildly sweet and tasty this eggless frosting is! I used a few squirts of Americolor Electric Pink to get a lovely shade on the vanilla Swiss meringue buttercream frosting on the outside of the cake and cupcakes.

The unicorn's horns and ears are made from sugar paste, and given the glam treatment with a generous brushing of Rolkem Supers Gold. I made sure that the buttercream cake was nice and hard before sticking the unicorns eyes on, cuz attaching fondant on soft buttercream is a bit messy. I carefully painted the eyes and lashes gold with a fine paint brush. It's really neat how everyone's unicorn cakes all have different expressions, just by changing the shape and colour of the eyes!

Now for the rainbow mane, I mixed up a few colours of buttercream in one piping bag and piped rosettes using a 1M piping tip on the top and on one side of the cake. I also piped on smaller rosettes and different kinds of swirls with other colours of buttercream, and added gold dragees and gold-painted royal icing drop flowers for interesting contrast and texture. I'm loving how little pinky turned out!

The cupcakes were vanilla cupcakes, frosted with pink vanilla Swiss meringue buttercream, decorated with little fondant horns brushed gold, and mini marshmallows cut in half for the ears! Using mini marshmallows really saved a lot of time instead of making a bunch of tiny fondant ears! I brush the cut side of the mini marshmallows with gold too to glam them up.

I added my own fun mix of "unicorn" sprinkles on top of the cupcakes, including two sizes of rainbow confetti, nonpareils and sugar pearls. The cupcakes look so cute yet fancy, in their gold cupcake wrappers.

Initially K's mummy wanted to walk over to pick the cake, since we incidentally only live a few blocks from each other, but I was like, no dude, I'll drive the cake over no prob!! I didn't want her walking home with a buttercream cake in our tropical 30C+ heat and humidity!
K's mummy did up a lovely little dessert table for the celebration home with with family and friends! I love the glitterlicious gold table cloth, and the clean and neat display of desserts! I'm guessing that she has some experience in dessert table styling!
