Unicorn Dessert Table

I love making anything unicorn. I don't know whether it's the splash of colour, the sultry eyes or the whimsical horn that gets to me... it's just unicorn magic! So for I was super excited when I was asked to do up a whole table full of unicorn desserts and cake for a l'il lady's birthday!

The birthday girl's mother said it had to be fair since I had done up a nice carousel dessert table set up for her older brother's 1st birthday a couple years back, so I had to do something fancier for his baby sister! Definitely grateful for this opportunity!

So for the dessert table, I got to make cake popsicles, macarons, cookies, cupcakes, jelly cups and the birthday cake, all in unicorn style!

I was so looking forward to finally using my brand new Silikomart mini popsicle silicone moulds to make the cake popsicles (aka cakesicles) in! I've been following @rymondtn on Instagram and his cakesicle creations are just genius! I couldn't find the mould locally so I hopped onto Amazon and had it shipped over here before Christmas!

The unicorn cake popsicles are funfetti cake pops, with the popsicle sticks baked right into the batter. I found that you have to spray the mould with non-stick baking spray first cuz even though it's silicone, the first batch of cake I made stuck like crazy. You gotta be careful when removing the cake popsicles from the mould after baking, especially when the cake is still warm and fragile. If you're patient (which I'm so not), you'd wait til they are completely cool before removing.

I made the horns out of fondant in advance, and my little trick for making the ears, is to simply cut a mini marshmallow diagonally in half! Boom, unicorn ears. Dip the cake popsicles in melted white chocolate to give them a base coat (cuz you can still see the funfetti sprinkles through the first coat of chocolate). Then, stick on the ears before the chocolate dries. Let the choc set completely, then dip again in the white chocolate. Attach the unicorn horn on top before the chocolate sets.

And now you'll have a blank canvas to unicorn up! I first painted the horn, eyes and ears on using Rolkem supers gold dust, mixed with a little bit of vodka, and then added on the "hair" using swirls of stiff royal icing dyed in pastel colours, embellishing with some sugar pearls. To finish off the unicorn cakesicles, I applied some blush for the cheeks, using some pink luster dust. I love love how my first foray into cake popsicles turned out!!

I finally got to make unicorn macarons too, after seeing the trend flood my instagram feed! Unicorn macarons are pretty much just round white macarons, except with ears a horn.

I filled these guys with fruity pebbles swirled into vanilla Swiss meringue butter just to add in more colour, since they are unicorns after all! The piped on the hair using the same royal icing as the cake popsicles, and then drew on the eyes using a black edible ink marker.

For the cookies, I made unicorn heads and glittery gold number 1 sugar cookies, decorated with royal icing. The unicorn mane was made by piping on stiff royal icing, with assorted piping tips for each of the different swirls.

The cupcakes were red velvet cupcakes, with a rainbow swirl of vanilla Swiss meringue buttercream and decorated with sugar pearls and a fondant unicorn horn. The cupcakes look so nice in this gold ferris wheel cupcake stand that I borrowed from All Mommy Wants!

Now for the main event, the birthday cake!! I really wanted to take the unicorn cake up a notch from the usual white cake with rainbow buttercream hair. So, for the bottom tier, I completely covered it in rainbow ruffles!! A lot of firsts for this table for sure, since I've never used this technique before! The ruffles are actually simple to make, but it is just really time consuming.

Each ruffle is cut out of different colours of fondant, using a circle cutter, and then creating the "ruffle" by folding it either in half and then in half again, or, by scrunching it gently from the centre until you get four "petals". Ok so, I'm not really doing a good job of explaining, so I'm gonna direct you to this video instead :P

You gotta let the ruffles dry a bit before sticking them onto your fondant covered cake base with a little bit of water, cuz if they're too soft, the weight of the ruffles at the top of the cake will sag down and kinda squish the ruffles towards the bottom of the cake. You can arrange the ruffles in organised colours, or you can do what I did, and place them on randomly for a neat rainbow confetti effect!

Another unique thing I did with this unicorn cake is to cover the horn and ears in gold hologram disco dust instead of just painting it gold! I just love that extra glittery glam effect!

To finish the unicorn off, I piped on the rainbow mane using Swiss meringue buttercream, with different piping nozzles to achieve cool patterns on the swirl. I painted the eyes gold with a fine paint brush and attached the letters on the cake board using some royal icing and here we have our 2-tiered rainbow unicorn cake!

All of these lovely unicorn desserts were put together on this sweet dessert table, styled in collaboration with the talented One and Only Gallery! I love the fancy pastel pink tutu table skirting and ruffly flower tablecloth! We added in some custom-labelled pastel pink and purple cotton candy too for that added fluff!

The celebration was held at D'Resort's 2-storey unit, which was a little cosy in my opinion. The backlight from the window made it challenging to take get good lighting in the photos, but I tried my best!

We also brought in 50 rainbow coloured helium balloons to float on the ceiling, with curly gold strings hanging down from a more dreamy set up! I am so so happy with how everything turned out! Happy 1st birthday to sweet baby unicorn Jacey!! Her blinging sequinned gold top with pastel pink sash, and voluminous white tutu are just too cute!!
