Pink Flower Cookies & Cake Pops

These lovely pink cookies and cake pops were for little girl Eva's birthday celebration with her family and friends. Her mummy didn't have a particular theme in mind, just a colour scheme! So, pink it was.

The sugar cookies are decorated in the same way as these cookies that I made for an Enchanted Fairies party. It's a simple yet sweet design, with a fondant flower and fancy "E" on top of the cookie.

The challenge with these cookies is how to store them to keep them fresh for the party. The flower is a bit delicate so placing them in cellophane bags or stacking them in a cookie tin may result in a few broken flowers.

So in the end, I went out and bought disposable plastic containers with lids, with 5 cookies fitting nicely into each. The containers aren't completely airtight, but they did the job and prevented the fondant flowers from "wilting" and the cookie from losing its crispness. Darn the super humid weather here in the tropics!

To go with the pink cookies, I also made glittery pink cake pops. The cake pops are strawberry cake, crumbled and swirled with vanilla Swiss meringue buttercream and then dipped in strawberry compound chocolate. Before the chocolate coating fully hardened, I generously sprinkled pink glittering sanding sugar on the cake pops. I used two different shades of pink: pastel pink & hot pink!

The sanding sugar ups the glam factor of these cake pops. Look at them sparkling in the light. And I love how vibrant the pink is, perfect for a pink party to celebrate sweet Eva's birthday!

Happy Birthday, sweet Eva!
