Princess Castle Cake


Little Jowyn was celebrating her 5th birthday at school. I remember when she was just a little baby and we used to call her my son’s “girlfriend”! Man, how time flies! Anyway, the birthday girl has a really great imagination. She wanted a  “Rapunzel princess with a prince and a monster who wants to eat them. The monster is green color with 4 eyes looking everywhere and a big mouth which is going to eat them.” Wow!!

With that vivid description, a castle cake came to mind! Jowyn had about 100 classmates to feed, so her mummy requested for cupcakes in addition to the cake. The cake is 7 layers of vanilla Victoria sponge, in alternating colours of pink, purple and white, filled and iced with vanilla French buttercream. I used crusting buttercream on the towers and the outside of the cake. Jowyn’s mummy requested to have minimal fondant on the cake, so it’s mostly decorated with buttercream.

I made the fondant figurines first so that they would have time to dry, before assembling the cake. First up, the princess.  I made her from the bottom up, starting with her skirt and ending with her hair! She has a concerned expression on her face cuz she’s worried about the monster that’s invaded her castle! Actually, I had forgotten I was supposed to make a Rapunzel princess until I had finished the cake. I went back to add in Rapunzel’s long braided hair afterwards. There are two long skewers that run through the princess and into the cake, which will help keep her stable for transport.

The prince is at the bottom of the castle, ready to save the princess from the monster! There’s a toothpick running through the prince’s sword to help keep it straight. His hands kept falling off too, so I stuck some toothpicks in to solve the problem. The prince has a funny expression too, cuz he's worried about the princess!

I tried to make the monster to match Jowyn’s description. He’s green, with 4 eyes looking around and big open mouth, ready to eat the princess! I sort of made him a cross between a dragon and Mike Wazowski from Monster’s Inc.

Now, to assemble the cake, first I stacked the round cake on top of the square cake, using 5 chopsticks cut down to the height of the square cake to support the weight round cake, which is on its own cake board. There is a central 6th chopstick that runs through both the round and square tiers, to help keep them stable.

The towers are made out of flat ice cream cones. I used a round nozzle to pipe on the buttercream to resemble stones. The turrets are made out of pointy sugar cones. Because I had to minimize the use of fondant, I left the sugar cones undecorated, just adding a small pink ball of fondant at the point to finish off the look. I added some fondant windows and door on the castle too. Now, what’s a castle without a flag? Of course, the birthday girl’s name had to be on the flag! I used an edible food marker to write that out. I added some fondant pink and purple daisies around the castle to give it a more “girly” feel.

I really hope Jowyn loves her princess castle cake! She will be in for a surprise when she cuts into the cake to see the pink, purple and white layers inside!

Oh, I forgot about the cupcakes! They are strawberry cupcakes, frosted with a rose swirl using vanilla Swiss meringue buttercream. I topped the cupcakes off with some pink and purple fondant daisies and a leaf cut from a rose calyx, so that the cupcakes would match nicely the castle.
