Hello Kitty Cake

It seems like I've been posting quite a few Hello Kitty creations these last couple of weeks. First the cake pops, then the cookies. And now this cake! Hello Kitty is one popular cat! Oh wait, she's not actually a cat... Anyway, today's cake is for a Hello Kitty themed birthday for a lucky little girl that's one year old!

Both Hello Kitty and the round tier she's sitting on are made of Devil's Food Chocolate cake, filled with whipped dark chocolate ganache and frosted with chocolate Swiss meringue buttercream. It's a really yummy cake that packs a big dark chocolate punch, without being too sweet! The 3D Hello Kitty is completely made out of cake. No cereal treats, though that probably would've been a lot easier.

Lovewithdetails did an amazing job styling and decorating the dessert table at the party. I'm loving the ruffles background. And the cute strawberry marshmallows on sticks! How many Hello Kitties do you see?

Fondant cakes are quite sensitive to heat and humidity. And because fondant cakes don't like to be in the fridge (fondant starts to dissolve with condensation that forms once the cake is taken out of the fridge. Please see detailed post here), fondant cakes don't have a very long shelf life, especially at temperatures over 25C (and it's usually over 30C here!).

Unfortunately, 12 hours after collection, Hello Kitty actually started to sag at the party since the venue was a bit warm. Both the fondant and the cake underneath became too soft. Tried as best as I could to touch her head up (that's why her bow is now on the left side!). Normally, I keep the aircon at 18C when I'm decorating cakes to make sure they stay nice and firm. It really is best to collect or have the cake delivered as close to the party time as possible and consumed within 3 hours, not because the cake will "go bad", but so that the cake maintains its structural integrity. Anyway, at least the guests really enjoyed eating Hello Kitty! She tasted much better than she ended up looking!
