Apple Cupcakes

To appreciate my childrens' teachers on Teacher's Day, I baked a bunch of lemon cupcakes frosted with Swiss meringue buttercream, and then rolled in red sugar and decorated to look like apples!!

The stems are pieces of Pretz butter-flavoured stick biscuits and the leaves are made of buttercream using a leaf nozzle. (Can't remember the number). It's good that my kids like the stick biscuits because I didn't use many. They gobbled down the remaining sticks in the the box...

An apple a day keeps the doctor away...but do apple cupcakes?

They look pretty cute. If I had green sanding sugar, I would've made some green as well. Oops, looks like someone took a bite out of this one!  

The apples look even better packaged up with a nice Thank You note stuck to them. My son even made a special card for his most favourite teacher!

Thank you to my kids' teachers! You folks put up with a heck of a lot from my two monsters: the whiny girl & the naughty boy! Keep up the good work!
