Hello Kitty Cake Pop

So I don't know what was wrong with the batch of white chocolate I bought this time around. It's the same brand and kind that I always buy, but today it was giving me a hard time because it didn't melt to a nice a smooth, drizzly consistency. Rather, it was thick and viscous. Had my cake pops not been nice and hard from the freezer, dipping them in this thick white chocolate would have ripped the cake pop clear off the stick!

In attempt to smoothen things out, I added a couple tablespoons of melted vegetable shortening to the melted chocolate and stirred. It did help things a bit, but the chocolate was still much too thick than it usually is. Sigh.

Anyway, these cake pops were Devil's Chocolate Food cake, crumbled and swirled with dark chocolate ganache, and then shaped into a semi-flat oval. Check out my cake pop basics page for more tips. To make Hello Kitty, I used mini white chocolate chips for the ears, jumbo heart sprinkles for the bow and a yellow confetti sprinkle for the middle of the bow. I didn't make faces on all the Kitties, but for the ones I did, I drew on her eyes, nose and whiskers with Wilton Food Markers. As I've said before, these markers don't draw very well on white chocolate. I really need to get my hands on those Americolour Food Markers.

The "faceless" kitties were rolled in white sanding sugar after coating them in melted white chocolate to "glam" them up a bit. So next time you're having a Hello Kitty-themed party, consider Hello Kitty Cake Pops. Too cute on a stick!
