The birthday girl's mummy liked the Minnie Mouse cake I did for my daughter's birthday so she asked me to recreate the cake for her daughter's school birthday celebration, of course with her own daughter's name on it this time.

The cake is 4 layers of vanilla cake, with each layer dyed a different shade of pink, in ombré style. The filling is a super yummy vanilla bean crème Mousseline, which is made by whipping equal parts of pastry cream and butter together. Mmm so rich. So yummy.

The cake is decorated with a layer of vanilla Swiss meringue buttercream, accented by pink fondant polka dots and the birthday girl's name in fancy fondant lettering. The cake is topped with a pair of Minnie ears and Minnie's classic pink bow with white polka dots on it. I used BBQ skewers to help the ears stand upright, making sure to let fondant dry completely before standing them up on the cake.

For an added level of girliness, there are buttercream ruffles bordering the bottom of the cake, piped on using piping tip number 104.

As giveaways for the the birthday girl's classmates, I baked up some matching Minnie mouse cookies, decorated with fondant and some royal icing polka dots. As with these cookies, I cut the pink and black parts out of fondant using a Mickey mouse cookie cutter, and then spliced the parts together with a little bit of water. I didn't want to layer the pink fondant on top of the black fondant cut-out because then it would just be too sweet from too many layers of fondant. For Minnie's bow, I used two hearts, placed point to point, with tiny royal dots on them too.

The cookies were individually wrapped in cellophane bags, tied off with a twisty-tie and a custom-designed matching Minnie Mouse label. Wishing birthday girl Envies a mouse-tastic 7th birthday!
