Happy Animals Rainbow Cake

I love love making cakes with bright colours and rainbows on top. So, I was excited when the birthday girl's mummy asked me to make a cake like this Rainbow Happy Animals Cake. She wanted the same cow and giraffe, but a purple hippo instead of the rabbit.

Both cake tiers are the ever-popular Devil's Food Cake, filled with whipped dark chocolate ganache.

The design of the cake follows this one, but this time, I had a way easier time covering it with fondant, thanks to my new fave Massa Ticino Tropic Fondant! I never have to resort to the "wrap and lid" method anymore! Even with tall, double-barrel cakes, never fear draping on a large piece of thinly rolled fondant, cuz Massa Ticino is so elastic that it doesn't tear! And the best part is that it tastes great.

As usual, I made the animal figurines a couple days in advance so that they would have ample time to dry hard. The birthday girl's mummy joked that the hippo better not be "Barney" purple! So, I was careful to colour the hippo a light purple. The animals were made in the same was as the fondant toppers for this cake.

To support the animals on the cake, I used long BBQ skewers and some royal icing. Now, upon delivering the cake, I found out that the party was outdoors, by the swimming pool! I really advise against having a fondant cake out of air-conditioning, exposed to the heat and humidity of the tropics, especially when there are fondant toppers and lots of details on the cake! The fondant will start to absorb the moisture in the air, and may begin to sag and droop. It's really hard to say how long a fondant cake can "last" outside, without compromising the aesthetics of the cake!

The birthday girl's mummy took my advice and kept the cake indoors in a cool, dry, air-conditioned room until most of the party guests had arrived. And I'm happy to hear that the cake survived and everyone loved it! It was out of air-conditioning for a half hour or so with no detrimental effects. 





The guests were apparently very busy taking photos of the cake. Hehe. I'm glad this bright, happy animals rainbow cake brought some colour and happiness to Megan's birthday celebration. Happy 1st birthday, sweet baby girl Megan!
