Mermaid Macaron Cake

Sooooo we are back to the heat and humidity of the tropics. I am so missing the cool and dry weather in Vancouver! And, not only did we move back, but we also moved to a new place! So it's kinda been non-stop packing and unpacking since August! And, because I'm itching to bake, and because my high school principal used to say "if you want something done, give it to a busy person," I committed to a cake order for one of my baking partners, for an event that was only 4 days after we moved into our new home! Talk about busy.


Little Mermaid Macaron Tower Cake


The cake is 3 layers of decadent devil's food cake, made with Valhrona chocolate, and filled with whipped dark chocolate ganache. It's a flavour that I haven't made all this time we've been in Vancouver, yet it is what 95% of my clients here order!! Maybe this flavour just tastes better in the tropics. Haha.


"under the sea"

The cake was decorated like the with fondant strips, made to be like the waves in the ocean, though I like to think of them as the "fins" around a mermaid's waist. I twisted strips of fondant for the seaweed, and used silicone moulds to make the sea stars and other sea creatures, painting them gold with Rolkem super gold (mixed with vodka) once they had fully dried overnight in an aircon rom. (Yep, back to working with fondant in an air-conditioned room!)

I used an edible image for the name on the cake, designed by All Mommy Wants, like the words on the DVD cover of the original Little Mermaid movie.



who's its and what's its galore!

I love how the cake turned out! The teal-purple-gold combination is a classic for mermaid-themed cakes. To add to that extra wow factor, the cake was topped with an awesome Little Mermaid macaron tower, by Milleaville Macarons. I love the details on Ariel!

As it turns out, the order was for one of my ex-coworkers! What a coincidence. Haven't been in contact with her for years!! Glad to have been part of the celebration. And am so happy that she and her guests loved the cake! Happy 1st Birthday, Winnie!
