Paw Patrol has just started to become a very popular birthday theme, thanks to the Nickleodeon channel. My kids didn't even know what Paw Patrol was a few months ago, but now they can't stop singing the theme song! Oh TV.

Anyway, earlier this month, I got to make a small Paw Patrol "test" cake for Ethan's grandma, cuz she's pretty particular and wanted to make sure that the cake tasted good before ordering a proper cake for his birthday! I'm glad she and her family loved the lychee cake and they ended up getting the same lychee cake flavour for the bottom tier of Ethan's birthday cake!
The lychee cake was 4 layers of lychee sponge cake, filled with lychee Swiss meringue buttercream and lots of pieces of lychee fruit. I did not want to go with a fresh whipped cream filling because I needed the buttercream to provide some support for the fondant.

I have always been apprehensive in putting sponge cake under fondant because even with support dowels, sponge cakes are just so darn soft that they may not offer enough support for the heavy fondant, especially if the upper tier is a heavier pound cake. For the upper tier of this cake, I went with a chocolate sponge, with chocolate buttercream filling, so at least wasn't as heavy as the usual Devil's Food Cake.

Both tiers were covered with a thin layer of sky blue fondant and decorated with edible image cut outs of the Paw Patrol character badges and little fondant paw prints in lots of different colours. The edible images were stuck onto fondant and then cut out with an Xacto knife. To border each tier, I made a red dog collar, taking the time to put details into the buckle and belt.

Oh yes, my daughter commented that she couldn't find Everest's badge on the cake. Everest makes intermittent appearances on the cartoon and she isn't part of the main "Paw Patrol" per say, so oops, sorry Everest! Guess I overlooked her!

There is room around the cake for the Paw Patrol toys that Ethan's mummy will arrange on top of the cake at the venue. The top of the cake is decorated with standing letters of the birthday boy's name and also a big no. 4.
