These mini chocolate cupcakes and mango-coconut pudding cups were desserts for a Barnyard-themed sweet table for a little boy celebrating his first birthday.

When people ask me how mini the mini cupcakes are, I like to use the word "bite-sized". Cuz literally, they're gone in just one (or maybe 2) bites. They're the perfect size when there are a lot of little kids at the party, cuz it's tough for a barely 2-year old to finish an entire full-sized cupcake.

These are triple chocolate cupcakes: chocolate cupcakes, frosted with a swirl of dark chocolate ganache, and sprinkled with crispy Callebaut dark chocolate pearls for that added crunch.

The mango-coconut pudding cups were layered in these square plastic containers. Each layer was a table spoon of pudding, with a chill-time of 20 minutes between each layer.

The "Chinese-style" coconut pudding was pretty straightforward to make. I got the recipe from here, which surprisingly uses an egg white to give the pudding a nice, light texture. It's pretty yummy cuz all the extra pudding went in my belly!

The mini cupcakes and pudding cups went on this super cute Barnyard-themed dessert table, styled by Ahhgogo. I love the cute paper toppers that were added to both the cupcakes and pudding cups, especially the paper sheep! The caramel corn package in "Chinese take-out" oyster pails were a nice idea too.
