Frozen is still a very popular theme to have for birthdays, so it is a challenge to make every cake unique. Details like icicles and snowflakes have appeared on previous Frozen cakes that I've done, but I try to mix it up by arranging them differently and adding other elements.

The cake is 4 layers of eggless brown sugar-vanilla cake, filled with 3 layers of caramel buttercream. With all that cake, filling and frosting, this cake was a good 3 kg in weight! Personally, I think that eggless cakes do not compare in taste and texture as that of cakes containing eggs, but hey, if one can't eat eggs, that shouldn't mean that one can't eat cakes! Eggless cakes rely on baking soda and acid (usually vinegar) to make them rise, instead of eggs. The recipe I used for this cake had both condensed milk and brown sugar, so it was sweeter than a regular vanilla cake that has eggs in it. "Let it go. Let it go!"
The cake was decorated using crusting vanilla buttercream, which I dyed a nice shade of teal using sky blue food gel colouring. I am quite happy with how smooth I managed to get the top of the cake, using the handy dandy Viva paper towel method! I smoothed the sides using a bench scraper, holding it in place at an angle while turning the cake on the turntable in one smooth and continuous turn. For the birthday girl's name, I cut out a piece of fondant using a fancy cookie cutter, and then used Tappits cutters for the letters in her name. I love the simplicity of this font. Looks classy. I cut out three sizes of snowflakes and stuck them all around the cake too.
An easy way to "Frozen-ify" an otherwise "winter-themed" cake is to simply top the cake is Frozen toys! It's nice to do it this way since the birthday girl gets to keep the toys to play with afterwards. I also added a fondant curly number 7, which I jazzed up with some edible magic sparkles.
