I was lucky enough to make cookies, cupcakes and cake pops
for an Enchanted Fairies-themed double birthday celebration! The party colours were pink,
yellow and green and I wanted all the baked goodies to have all the colours on
them.

First up, the cookies. I baked up a batch of sugar cookies,
this time using a recipe that has no baking soda to minimize the spreading. Sugar cookies usually have a spreading issue and I end up having to re-cut them after
they’ve come out of the oven! This is double the work, not to mention tons of
cookie scraps. This time around, not only did I omit the baking soda, I also
rolled the cookies thinner, and froze them solid after I cut the circles out before baking them straight from the freezer! That, my friends, is the trick to
minimize spreading (there will inevitably be some spreading).

While the cookies were cooling, I made some fondant daisies
using my handy daisy plunger cutter. I rolled little balls of fondant
for the center of the flowers, attaching them on with some water. I also cut some leaves for the daises out of green fondant using a small rose calyx cutter, and then trimmed them into five pieces.

The birthday girls’ names start with “K” and “R” so that’s
why the cookies feature these letters. I used my brand new fancy font cutter
(hooray for eBay!) to cut the letters out. It’s easier to cut them out if the
fondant is a bit on the drier side, so roll out the fondant, let it sit for 5
mins, and then press the cutter onto it. I cut out circles of fondant and
attached them to the cookies using a little bit of water. You can use a smear
of buttercream or some apricot jam too. For the details, I brushed the letters
& daisies on with a bit of water to attach them onto the fondant-covered
cookie.

For the cupcakes, I really wanted to use the fancy Wilton
pink petal cupcake liners but there were none to be found here. Once, again,
good ol’ eBay. I was worried that the liners wouldn’t hold up if I baked the
cupcakes directly in them, but they turned out ok. The only annoying bit is
some of the petals are wrinkly and stayed wrinkly even after the cupcakes were
baked. Think I'll try baking them with a double liner next time. The cupcakes are a very light lemon cupcake with a delicate crumb. The
recipe has egg whites and sour cream in it, which gives it a nice light texture
and a slight tangy flavour.

I did a simple rose swirl frosting on the cupcakes with some
pink vanilla French meringue buttercream. I love French meringue buttercream
because it’s super rich yet velvety smooth & easy to pipe. Hey, I gotta use
up all those egg yolks somehow! I always seem to have dozens of egg yolks
sitting in my fridge. The cupcakes already look pretty in their petal liners, but they look even prettier with a daisy and a leaf added to them.

Finally, the cake pops. I crumbled up some strawberry cake
and swirled it with some strawberry buttercream and rolled the mixture into
balls. Once they were frozen, I attached them onto the "sticks", dipped them in
strawberry-flavoured pink chocolate and added a daisy to make them a bit more

And about those sticks. I didn’t just use regular cake pop
sticks. I used mini star wands! These babies were not easy to get in silver.
Once again, I had to buy a couple dozen off of eBay! (Seriously, this is not a plug post for eBay…)
Unfortunately, the delivery was running late and I had to scour town to find
some, before finally finding some silver and pink mini wands in a party store. Ironically enough, the FedEx delivery person rang my doorbell just as I
had finished all the cake pops. Geez, Louise. Well, at least I’ll have them
ready for the next party that needs star wand cake pops!

I was worrying about how to transport the cake pops without having them fall over. They probably would've been fine lying down but I didn't want to risk having the flowers fall off or the cake pop crack because of being jostled around. Then I had a moment of brilliance...why not use an egg carton! It totally worked and totally kept the cake pops in one piece!
