Today's cake is all about chocolate. Devil's Food Cake. It's the ultimate chocolate indulgence. Dark, rich and dense, it's the total opposite of Angel Food Cake! This chocolate cake goes one step further in the chocolate department, since it's made using black cocoa powder instead of the regular cocoa powder.

Never heard of black cocoa powder? I'm sure you have! If you love Oreos, you are going to love this cake. Oreos are made with black cocoa powder, and this cake tastes like Oreos, in cake form. Not like cookies and cream, but that dark chocolate taste that only Oreos have. Black cocoa powder has gone through the Dutch process once, giving it its distinctive black colour. Normal Dutch-processed cocoa powder only goes through the process once.
Aside from the dark Devil's food cake, this cake also features 3 other chocolate techniques. The bottom tier and the circles are made using dark chocolate fondant. The chocolate roses and leaves are made out of modeling chocolate, and the chocolate curls on top of the cake are made using "food processor" modeling chocolate (that's just chocolate that's been blitzed in the food processor until it forms a paste that can be shaped).
So this cake wasn't actually for a wedding. But it could have been, right? Imagine the draped look of the fondant for 3 or 4 or 5 tiers and in white, with a couple of roses to accent it. That would make a nice wedding cake.
